Ingredients
  • 6 pound chicken, rinsed
  • 1 Onion, peeled and diced
  • 1 large celery stalk, diced
  • 1 Carrot, peeled and diced
  • 4 red potatoes, quartered
  • 2 sprigs rosemary
  • 3 Sprigs fresh thyme
  • 0 Salt & Pepper
  • 1 tablespoon olive oil
Directions
  • Preheat oven to 375 degrees.
  • Add olive oil to the Copper Chef pan and brown chicken on all sides. Remove and set aside.
  • Add vegetables and potatoes and cook for about 4 minutes.
  • Place the chicken back in the pan on top of the vegetables.
  • Place the pan in the oven and cook for 1 ½ - 2 hours.
  • Serve.
